Hi All

I hope everyone had a lovely Easter - special thanks to all those who
supported us by choosing an alternative to lamb!

In addition comments received along the lines of "Absolutley Gorgeous" and
"The best beef we'd ever tasted" are always very rewarding.

As you probably know our lamb is all grass reared, which we believe gives
the meat a sweeter taste and as a result it just wasn't ready for Easter.

David is hoping to have our own Spring Lamb available in the shop for the
weekend of 25TH APRIL.

SEASONAL FRUIT "> MEAT THIS WEEKEND

I have heard a rumour that it might be Barbque weather this weekend! So
just in case we will have available:

* Our own Beef burgers

* Pork & Apple burgers

* Simple Suppers marinated ribs

* Frozen Rump and Sirloin steak

* Fresh Chicken thighs and legs

* Wildboar & Apricot Sausages

* Wildboar & Apricot Burgers

* Venison Sausages

* Strips of Pork Belly Draft

FRESH PORK

* Boned & Rolled leg

* Boned & Rolled Shoulder

* Loin Chops

*
Strips of Belly Draft

* Diced Hand

FRESH CHICKEN

* Whole

* Fillets

* Thighs

* Legs

VENISON

* Diced

RECIPE OF THE WEEK - Thankyou David and Christine

Herb Sausage Casserole

Ingredients;

450g good quality Pork and Herb Sausage
225g smoked bakon
one medium onion
two cloves garlic
teaspoon thyme
one Bayleaf
one heaped teaspoon flour
275ml. wine or stock ( or combination)
olive oil
salt and pepper to taste

Cook the sausages until brown all round and put to one side. 
Then lightly brown the bacon pieces, garlic and onions in a little olive
oil.
Then add a litttle flour to absorb the juices. Gradually stir in the
wine/stock.
Add the tin of chopped tomatoes,along with the bayleaf, thyme and a little
seasoning. Combine the two and simmer gently for 30 minutes.

Serve with mashed potato and seasonal vegetables of your choice.

FARMING NEWS

We are opening the farm on "Open Farm Sunday" again this year which takes
place on Sunday 7th June. It was
a great success last year, 

and we hope to have a repeat performance this year. There will be a
Barbque, tractor and trailer rides, food tastings, sheep shearing demos and
lots more....

 David is hoping the have the combine harvester here and some of the beef
stock - I will keep you up-dated so watch this space.

It doesn't feel like Barbque weather today - I hope it improves for the
weekend!
