Hi all

Well at least the weather has given the media something else to think
about!

FRESH MEAT THIS WEEKEND

The following fresh meat will be available in the shop from Friday, this
will be the last weekend for FRESH game, as the shooting season officially
finished on January 31st.

FRESH BEEF - joints, steaks, stewing and mince
FRESH PORK - joints, loin chops & belly draft
FRESH CHICKEN - whole, fillets, thighs & legs
FRESH GAME - Wilbboar & Apricot Sausages, Diced Venison, Venison Steaks,
Pheasant, Mallard & Partridge whole & fillets.

NEXT WEEK - FRESH RYELAND LAMB

THIS WEEKS RECIPE - Thankyou again Precilla!

Braised Silverside of Beef    
 
1.5kg Silverside of Beef
Dripping or cooking oil
225g cooking onions
225g carrots, peeled and sliced
225g parsnip OR turnip
3-4 sticks celery, chopped
1 bouquet garni
1/2 pt stock
salt & pepper to taste
 
Brown meat on all sides in a large pan
Place all vegetables in a deep casserole
Place meat and juices on top
Add stock and bouquet garni and season
Cover and cook on low heat 325F until meat is tender
2-2 1/2 hours.
 
Serve with potatoes and any other vegetables of
your choice.

FARMING NEWS
We have nearly finished lambing all the ewes that were here at Ellenden
over the summer, and the lambs seem to be doing really well despite the
weather!  The lambs Emily and Toby were feeding have been adopted onto two
ewes that had still born lambs, but David's father assures me there will be
some lambs from the remaining flock at Coughton that will be in need of
bottle feeding and there will be opportunities for all ages to participate!

If anyone wants to come and see the lambs, they are in the fields at the
back of the shop and the paddock across the road where the hens used to be.

HENS
We still have all our hens, a number of customers have asked us if we have
"got rid of them".  Most definitly NOT!  They have just moved further back
under the orchards to peck at fresh ground, and they are laying well. 

I think that covers everything for this week.
