THIS WEEKS RECIPE - Thankyou Tom!
PLEASE KEEP SENDING ME RECIPES - I desparately need them even if no one
else does!!
COTTAGE PIE
INGREDIENTS, MEAT BASE
Mince. One Ellenden size pack. ie 400-500 grams. Beef or lamb, Your
choice.
Large onion
Garlic one clove
Olive oil
One chili
Large carrot
Fresh / Dried herbs, rosemary is good for lamb, sage and thyme for beef.
Oxo cube
Worcester sauce
Tomato puree
MASH TOPPING
Make enough mash to cover base to the thickness that you like.
Use potato mash or a mixture of potato with swede or parsnip.
In the summer crushed new potato is good.
METHOD
Fry the onion and garlic in olive oil until it starts to brown.
Add the meat and carrot.
Stir until the meat has separated & is no longer red.
Add a good splash of Worcester sauce, the Oxo, chopped herbs, a good
squirt of tomato puree and enough potato cooking water to almost cover.
Wine can be added here if you have some.
Simmer for about 10 minutes.
Put the meat base in a casserole and top with the mash. Leave a narrow gap
around the edge or the gravy might boil over the top.
Spread a little butter over, and if you have some tomato and cheese, slice
it and spread that over the top as well.
Cook in a medium oven until the top is light brown and the tomato starting
to blacken.
Serve with sprouts or cabbage.
