FARMING NEWS
Exciting news on the farming front - we have our first lamb born! 
Unfortunately with the Christmas build up David had no time to organise
accommodation for the ewes, so at the moment they are lambing under cover
at the Tennant farm in Coughton.

The plan is to lamb all the ewes at Coughton and then bring them over to
Ellenden when they are strong enough to cope with the elements!  Next year
we will be more organised.



CREAMY PAPRIKA PORK RECIPE
I cooked this tonight from one of recipe leaflets we give away in the shop
and could not believe how easy it was!  We were defrosting one of the
freezers and it occured to me we hadn't tried the diced "Hand" of pork (a
cut off the shoulder).

I defrosted 450g of diced pork in the microwave and then followed the
recipe below - it cooked for 1.5 hours slowly whilst putting the children
to bed - I was worried about defrosting in the microwave, but it made no
difference to the tenderness of the meat at all.

TAKE
1 pack of diced Hand of pork
oil
Garlic
Onion
Can of Chopped tomatoes
Paprika
Greek Yogurt (I used low fat Natural yogurt)

MAKE
Heat 5ml (1tsp) oil in a large pan and cook the diced pork for 3-4mins
until browned.

Add 1 clove garlic, crushed, and 1 onion, sliced cook for a further 3-4mins
 - I also added mushrooms

Add 400g can of chopped tomatoes and 10mls (2tsp) paprika, place in an oven
(Gas mark 3, 160 degrees C 325 degrees F)  and cook for 1 - 1.5 hours until
pork is tender.  Carefully stir through 60mls (4tbsp) Greek yogurt and
serve sprinkled with a dusting of paprika.

EAT
Serve with parsnips mashed together with lots of black pepper and a knob of
butter and steamed vegetables (we had carrots, sprouts and swede).  David
was amazed - more than anything that I had cooked for him I think!!

We also decided this was quite a healthy meal using the low fat yogurt,
lean pork is supposed to only contain 4% fat - eases the conscience after
the christmas indulgence!



FRESH MEAT THIS WEEKEND
We will have the following fresh meat available this weekend:

Fresh Pork
Fresh Chicken, fillets, thighs and legs
Fresh Diced Venison
Fresh Haunch of Venison
Fresh Venison Steaks
Fresh Pheasant, including fillets
Fresh Partridge, including fillets
Fresh Mallard

In case you are not aware, it is worth noting that the shooting season for
pheasant, mallard and partridge ends February 1st.

A customer came into the shop today and asked if the partridge breasts
could be cooked like chicken fillets, we decided they could, and I have had
a lovely email tonight saying how delcious they were!



FOOD GENIE
Richard's pies are continuing to be a huge success - we are currently
stocking a new line made with our braising steak "Braised Beef with
Caramelised Root Vegetables"  Any feedback on this product would be much
appreciated.

He is still making Chilli's, Lasagnes and Cottage pies with our beef mince
for those nights when an easy option is required.



RECIPE LEAFLETS
We have quite a few of these to give away - please ask if you can't see one
on the counter.


Finally I would like to say Thankyou to all our cusotmers who are
continuing to come into the shop with positive feedback on recent
purchases, or take the time to write emails - I hope I have replied to all
individually.  I am hoping to get around to putting your comments on the
website now in theory I have more time!

Have a good week - I see the weather is supposed to get milder for the
weekend - all of 8 degrees - I think this might feel quite a bit warmer
than recent days in the shop!
