Not so spring like today......
FRESH MEAT THIS WEEKEND
PLEASE REMEMBER IF THERE IS A PARTICULAR CUT AND SIZE OF MEAT YOU WOULD
LIKE, LET ME
KNOW BEFORE WEDNESDAY EVENING (10.30pm).
This weekend we will have the following FRESH meat available:
* LAMB - Boned & Rolled Leg & Shoulder
Leg & Shoulder on the Bone
Lamb Chops & Steaks
Boned & Rolled Loin of Lamb
Mince
Breast of Lamb
* PORK - Boned & Rolled Leg & Shoulder
Diced Shoulder of Pork (Hand)
Loin Chops
* CHICKEN - Whole
Fillets
Thighs
* DUCK BREASTS
* VENISON - Diced, Steaks, Sausages
* WILDBOAR & APRICOT Sausages
THIS WEEKS RECIPE
BRAISED LEG OF LAMB - Thankyou Adrian!
Serves 6
1 large leg of lamb
Salt and freshly ground black pepper
Olive oil
6 rashers of thick streaky bacon
3 red onions, peeled and quartered
3 cloves of garlic, peeled and sliced
2 good handfuls of mixed fresh herbs (thyme, rosemary, bay)
4 large potatoes, peeled and cut into chunks
1 celeriac, peeled and cut into chunks
6 large carrots, scrubbed and halved
3 parsnips, scrubbed and halved
1 bottle, yes a bottle, of white wine
Preheat the oven to 170C/325F/gas 3. In a large casserole pot or deep sided
roasting tray, fry your well seasoned lamb in a couple of good lugs of
olive oil until brown on all sides. Add the bacon, onions and garlic and
continue to fry for 3 more minutes. Throw in your herbs and veg, pour in
your wine plus an equivalent amount of water, bring to boil and tightly
cover with kitchen foil. Bake in the preheated oven for 5 hours until
tender, seasoning the cooking liquor to taste.
To serve, pull away a nice portion of meat, take a selection of veg and
serve with some crusty bread to mop up the gravy.
FARMING NEWS
We have some sad news this week, two of our lambs were attacked in the
field and killed by a dog on Friday. It was only thanks to my mother that
we didn't loose more... Please spread the word about the importance of
keeping dogs under control at this time of year when walking close to
livestock. Although a very last resort, the farmer does have the legal
right to shoot any dog caught worrying sheep.
On a brighter note, the three lambs we are bottle feeding are doing well,
and people of all ages have been coming to feed them. Just drop me a line
if you would like the opportunity.
