RECIPE OF THE WEEK - Thank you Cathy
BEEF GOULASH (Serves 6)
1kg of either Ellenden Shin of beef, Braising Steak or Stewing Steak
2 Tbsp of Seasoned plain white Flour (we now stock Doves Gluten free &
Wheat free plain flour)
Approx 3 Tbsp of Olive or Rape oil
700g Onions peeled & Chopped
225g Simple Suppers Oak Smoked Streaky Bacon cut into cubes with rind cut
off
2 Garlic Cloves, peeled & Crushed
4 tbsp Paprika
2 tsp Dried mixed herbs
400g tin of chopped tomatoes
300 mls of Beef stock
150 mls Creme fraiche or Natural yogurt
METHOD
Toss the beef in the seasoned flour to coat and fry in small batches in
some of the oil until browned. Put to one side
Fry the cubed bacon in the oil until it is crispy and set to one side
Fry the onions and garlic in remaining oil until starting to soften and
turn golden
Add the beef, bacon, garlic and onions to a large casserole dish and bring
to a good heat. If you fried the above in the casserole dish, just drain
off any remaining oil first.
Add the Paprika nad stir for a minute.
Add the herbs, tomatoes and stock.
Bring to a simmer and transfer to the bottom oven for 1.5 - 2 hours or
until tender.
Check halfway through that there is suffcient liquid.
Check the seasoning and stir in the creme fraiche or yogurt just before
serving.
Goes well with plain boiled rice or mashed potatoes.
FARMING NEWS
David's father came to pick up the bottles for the lambs last week, which
means we will have some lambs to bottle feed in the near future......I will
let you know when times are available for you to come and visit.
I did notice this week how the nights are drawing out - however more
daylight usually means longer working hours!!!
Have a good week
Kind regards
Sara
