A vast improvement in weather this week, and it really does seem to make
everyone much more cheerful!

ELLENDEN FREE RANGE EGGS
We have decided the fairest way to sell the eggs is to weigh them.  As a
result we now three price ranges:

Small eggs (under 55g) 75p half a dozen
Medium eggs (55g - 65g) £1.25 half a dozen
Large eggs (65g - 85g)  £1.50 half a dozen

We have put the eggs into boxes with a price on each box.

RECIPE OF THE WEEK  - Thank you Sally, a nice change from Asparagus!

Rhubarb & Orange Fool (serves 4)

30ml/2 tbsps freshly squeezed orange juice
1tsp finely shredded orange rind
1kg (roughly 10-12 stems) rhubarb, chopped
1 tbsp redcurrent jelly
45g caster sugar
150g custard
150ml double cream, whipped
Crisp biscuits (eg brandy snaps, available from Ellenden!)

1) Place the orange juice and rind, the rhubarb, redcurrent jelly and
sugar in a pan.  Cover and simmer gently for about 8mins, stirring
occasionally, until soft.
2) Remove from the heat and leave to cool completely.
3) Drain the cooled rhubarb to remove some of the liquid.  Puree the
remaining rhubarb or push through a sieve.
4) Stir the custard into the puree, then fold in the whipped cream.  Spoon
the fool into individual glasses or bowls, cover and chill.  Serve with
crisp, sweet biscuits.

FARMING NEWS
Weather permitting we are hoping to shear the sheep on Open Farm Sunday!

David is busy spreading fertilizer on the land at the moment, and then
starts silaging next week.  This will be used to feed the cattle during
the
winter months


OPEN FARM SUNDAY JUNE 13TH
The Gun Dog society have confirmed they are willing to come and do a
demonstration - something different!

We have planned the route of the Nature Trial, which will involve a
pleasant walk around the fields and orchards, answering questions at set
points on the route - All completed Q&A sheets will be entered for a free
prize draw to Adopt one of our hens which seems to be very popular!

Kate and Sophie from Harvington Pre School committee have very kindly
agreed to come and do an "Arts and Crafts" table to help keep the children
entertained!


CONGRATULATIONS
I would like to take this opportunity to congratulate Sophie Clarke on
walking 28 miles around London, commencing 12 o'clock Midnight Sunday
morning - all in aid of Brest Cancer!  Well done Sophie I am full of
admiration.

Lets enjoy the warm weather whilst it lasts - I remember this happening
last year and then June arrived........!
